Handvo- Mix veg Pancake

Ingredients
- 1 cup Rice
- ½ cup Chana Dal
- 1 cup Suji / Oats Flakes
- ¼ cup Toor (arhar) Dal
- 250 gm Lauki
- 200 gm Carrot
- 100 gm Green methi
- 4-5 Green Chilli (Chopped)
- 1 pc Ginger
- Dhania for garnishing
- 2 tsp Eno
- 1 cup Curd
- 3-4 tsp Oil
- 1 tsp Mustard seeds
- 2 tsp Til (seaseme seed)
Instructions
- Wash rice and dal and soak for 3 to 4 hours.
- Keep suji dry.
- Grind rice and dal in a jar to a coarse batter, add suji to it.
- Add 1 cup curd in it.
- Peel the vegetable (Lauki and carrot). Grate them and add to the batter.
- Add grated chillies, ginger, methi leaves in it.
- Add 1 teaspoon oil, salt, turmeric and mix it well. Add Eno salt.
- In a non stick pan add 3 teaspoon of oil, mustard seeds and til.
- Slowly add the batter in the non stick pan and spread it evenly. Make small pancakes in size and cover it with glass lid.
- Let it cook from one side on a low flame for 7-10 minutes.
- Turn the cake upside down in a plate and again keep it in the pan the other side of the cake will be cooked in 4-5 minutes.
- Important:- Do not cover the pan with glass lid once turned.Preparation time is 20-25 minutes in all.
- Serve it hot with green chutney and sauce.
