Ingredients
  

  • 150 gm (1 कटोरी) मूँग धुली दाल
  • 2 इंच अदरक का टुकड़ा
  • 2 हरी मिर्च साबुत
  • 3 हरी मिर्च छोटे टुकड़ों में कटी हुई
  • 2 प्याज़ (बारीक कटे हुए)
  • 1 medium शिमला मिर्च (बारीक कटी हुई)
  • 2 टमाटर (बीज निकाल कर बारीक कटे हुए)
  • स्वादानुसार नमक
  • 1 चम्मच हल्दी
  • जीरा
  • लाल मिर्च पाउडर
  • मक्खन
  • Eno

Instructions
 

  • मूँग दाल को अच्छे से धोकर 1/2 घंटा या  अधिक समय के लिए भिगो दें।
  • अब पानी निकाल कर दाल को अदरक और हरी मिर्च के साथ mixi में पीस कर fine paste बना लें।
  • दाल के paste को एक bowl में डालें। इस mixture को 3-4 minutes तक अच्छे से फेंटे। 
  • अब आधा mixture अलग bowl में निकालें। इसमें नमक, हल्दी, जीरा, हरी मिर्च, प्याज़, शिमला मिर्च व टमाटर मिलायें।
  • गैस पर pan गर्म करें। इसमें 2 छोटे चम्मच तेल डालें। 
  • दाल के mixture में ¾ teaspoon eno डालें व eno पर 2 चम्मच गरम पानी डालें, जिससे eno अच्छे से activate हो जाए।
  • Eno को mix करें। 
  • इस mixture को गैस पर रखे पैन पर डाल दें। करछी की सहायता से समतल फैला लें। 
    इस पर लाल मिर्च powder व कटा हरा धनिया डालें।
  • पैन को ढ़ककर धीमी आँच पर 2-3 minutes तक रखें। 
  • नीचे से सिकने पर moonglet पलट लें।
  • अब ऊपर की तरफ़ पिज़्ज़ा cutter या चाकू की सहायता से हल्का-हल्का slit लगा लें। परंतु ध्यान रखें कि pieces अलग न हों। इस पर थोड़ा मक्खन डालें।
  • ढक्कर 2 minutes आँच पर रखें।
  • अब ढक्कन हटाकर उलट-पलट कर करारा सेक लें। 
  • इच्छानुसार pieces कर इमली की चटनी व धनिया चटनी के साथ serve करें।
  • इसी प्रकार बाक़ी के बचे आधे mixture में eno मिलाकर एक और moonglet तैयार कर लें।
